Ingredients

  • 1½ lb 80/20 ground beef
  • 1 large yellow onion, sliced paper-thin
  • 1 tbsp neutral cooking oil
  • 1 tbsp butter
  • Kosher salt
  • Freshly ground black pepper
  • 4 slices American cheese
  • 4 soft burger buns
  • 2 tbsp butter, softened, for the buns
  • Yellow mustard, for serving
  • Dill pickle slices, for serving

Method

  1. Divide the ground beef into four equal 6 oz portions.
  2. Use the IKX1 Patty Press to form four evenly sized patties. Handle the beef as little as possible once formed.
  3. Season both sides generously with kosher salt and black pepper.
  4. Heat a griddle or heavy skillet over medium heat. Add the oil and butter, followed by the sliced onions and a pinch of salt.
  5. Cook the onions slowly, stirring occasionally, until soft, deeply golden and caramelized, about 10–12 minutes. Remove and keep warm.
  6. Increase the heat to medium-high and place the burger patties on the hot cooking surface.
  7. Cook without disturbing for about 3–4 minutes, until a deep brown crust forms underneath.
  8. Flip the patties and cook for another 3–4 minutes, or until they reach your preferred doneness.
  9. Add a slice of American cheese to each burger during the final minute of cooking and allow it to melt.
  10. Butter the cut sides of the buns and toast them on the griddle until golden.
  11. Build each burger with mustard and pickles on the bottom bun, followed by the cheeseburger patty and a generous pile of caramelized onions.
  12. Rest for a minute, close the buns and serve hot.
